Bisquick Sugar Cookies

Approximately 2 years ago, my mother-in-law baked some cookies she saw on the back of the Bisquick box. She didn't care much for the cookies, but I did! They were buttery, rich, and tasted like a sweet, moist, dense biscuit. I have wanted to make these cookies for some time, but could not find the recipe. I looked online, but couldn't guarantee I found the same recipe. Well, today I decided to pick one of the Bisquick website recipes and give it a try. Although, I am not sure it's the exact same recipe, they are very close and just as good! What is great about these cookies is they can be colored for any occasion, are super easy to make, and don't take many ingredients. I added pink and blue colored sprinkles to the sugar to give them a fancier look. I brought some to mom's for dinner last night and my whole family enjoyed them... raved about them actually! I am one happy girl :)




 Bisquick® No-Roll Sugar Cookies

4 cups Original Bisquick® mix

1 1/2 cups powdered sugar

3/4 cup butter or margarine, softened

1 teaspoon almond extract

2 eggs

1 cup granulated sugar

1. Heat oven to 400ºF. In large bowl, stir all ingredients except granulated sugar until soft dough forms.

2 .Shape dough into balls, about 1 inch in diameter; roll in granulated sugar to coat. On ungreased cookie sheets, place balls about 2 inches apart. Flatten balls slightly with bottom of glass.

3. Bake 5 to 6 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling racks to cool. Store in airtight container
